Veganuary Day 24: Sweet Potato Toast 

My friend Nathalie introduced me to sweet potato toast and if she hadn’t I think this craze may toatally have passed me by! I’m so glad she brought it to my attention as these nutritious filled slices are a revelation! 

Thinly slice a large sweet potato and pop in the toaster for around 5 minutes, or until completely cooked through and browned on the outside. (If sliced too thickly it will be undercooked in the middle.)

Spread with your favourite toppings – I like avocado but it would work equally well with nut butters, berries and maple syrup or homemade chocolate spread

I’ve been enjoying this as a mid-morning snack with a mug of Marmite whilst I’ve been off work poorly and it’s definitely a welcome pick-me-up!
