Today has been a shocker of a day: a careless driver running through a red light straight into my car didn’t start the day well, followed by a ten hour shift at work, and a stinking cold. I’m in need of some indulgence. This comes in the form of a comforting hot chocolate – no ordinary hot chocolate, but one with all the trimmings.
My usual fall-back option of ready mixed almond milk with dark chocolate just won’t cut it tonight, so I’ve melted some peanut butter with dark chocolate and almond milk and I feel better already.
- 1 x tbsp natural smooth peanut butter
- A drizzle of maple syrup
- Splash of water
- 150ml almond milk
- 3 squares dark chocolate (70%)
Over a low heat, melt the peanut butter, chocolate and maple syrup together with approx 1 tbsp water to stop it from burning. Slowly whisk in the almond milk until frothy and beginning to bubble.
For a truly decadent vegan hot chocolate I sometimes serve with a blob of coconut cream but this recipe is so rich from the peanut butter that it simply doesn’t need anything else.
