Although Christmas seems like aeons ago, we’re having our annual family party at my mum’s today as we didn’t get the chance over the festive period. This will include my sister’s family too and by trial and error my mum has found the most successful meal that suits everyone is a paella. She usually makes two dishes, a meat and a vegetable version. Thankfully her vegetarian version is also vegan so I’m not putting her to any more effort than usual!
This is her tried and tested paella recipe, which even Mathilde eats as my mum deliberately packs it full of butter beans, just for her.
- 1 x large onion, finely chopped
- 1 x 400g tin butter beans
- 1 x 200g tin kidney beans or butter beans
- 1 x red pepper, diced
- 2 x carrots, peeled and diced
- 2 x garlic cloves, crushed
- 200g paella rice
- 1 x tsp paprika
- 1 x tsp turmeric
- 650ml veg stock
- 100g frozen peas
- 100g frozen sweetcorn
- 4 x small tomatoes, cut into wedges
- 1 x lemon, 1 x lime cut into wedges to serve
Fry the onion and garlic in olive oil until soft. Add the red pepper, carrot, turmeric, paprika and rice for 2-3 minutes until the rice is opaque.
Pour in the stock and simmer gently for 10 minutes, without stirring.
Add the remaining ingredients and heat through for a further 10 minutes. Stir through so the rice is fluffy, season with black pepper and serve with lemon and lime wedges.
