Day 357: Jude’s Christmas Wish Biscuits

Oh to be two again.

Me: Jude, what would you like Father Christmas to bring you?

Jude: Umm, a biscuit.

Me: [with super smug smile on face] Done!

I’m even going one step further and making my own homemade biscuits to slip into his stocking. I have ‘101 cookie cutters’ that were a Christmas present themselves a few years ago, surely Jude would love a dinosaur shaped biscuit to suit his particular current obsession.

*101 cookie cutters does not include dinosaur shapes.

  • 100g butter, softened (but not melted)
  • 100g caster sugar
  • 200g plain flour
  • Half tsp vanilla extract
  • 1 x egg
  • Pinch of baking powder

Cream the butter and sugar together with a wooden spoon until light and fluffy.

Beat in the egg the stir in the flour to make a dough. Wrap in clingfilm and leave in the fridge for 30-60 minutes.

Roll out on a floured surface to approx 3-5mm thickness. Use cutters to make the shapes, place on a lined baking tray and bake at 180C for 10 minutes.

Leave to cool completely on a wire rack. Ice, using 100g sifted icing sugar mixed with 2 tbsp just boiled water.

Decorate and don’t worry about them being messy – the kids won’t notice!

UPDATE: Mercifully, the dinosaur cutters were found at  the back of the cupboard – Christmas is saved! If only the eldest children’s Christmas requests were as simple…
