We seem to be eating a lot of soup at the moment but I’m not going to apologise for it as this cold snap is calling for some warming wintry food. This flavoursome recipe includes tiny orzo pasta, which makes it totally filling and more like a meal anyway. It’s also packed full of veg, which I’m hoping the kids won’t pick up on and they’ll just be wowed by the delicious taste.
- 200g orzo pasta
- 1 x onion, finely chopped
- 1 x red pepper, diced
- 1 x courgette, finely diced
- a few handfuls of spinach
- 1 x 400g tin chopped tomatoes
- 1 x litre veg stock
- small bunch of basil, finely chopped
Fry the onion in olive oil for a few minutes then add the red pepper and courgette until they all begin to soften.
Pour in the tinned tomatoes and stock and bring to the boil. Add the pasta and simmer for 8 minutes. Stir through the spinach and basil until wilted and serve whilst piping hot.
I added a good splash of tabasco to mine but left it out for the kids. It’s a perfect make in advance evening meal for when the kids get home and I’m working late. It also made The Man of the House’s evening slightly easier too as Mathilde ate it all.
