Poor Number One Daughter, she’s the only one going to school today. (The Eldest Boy is on a residential trip with school and Mathilde has a teacher training day.) For her efforts, I’m deviating from her usual lunch staple of hummus and making her an extra special sandwich filling using avocado (another favourite) and chickpeas for her packed lunch. We may even snaffle some to take with us for a picnic on our day out at the Museum of Science & Industry in Manchester.
- 1 x large ripe avocado
- 1 x 400g tin chickpeas, or cannellini beans
- 1 x garlic clove
- A few basil leaves
- A squeeze of lemon juice
Combine all the ingredients together in a food processor and blend until fairly smooth – I like to leave a few chunks.
I made sandwiches with lettuce and bake-at-home rolls for a really fresh and healthy lunch.
