Pasta is one thing all the kids will eat. Fact. Avocados are a different matter. Number One Daughter devours them, The Eldest Boy doesn’t mind them, Mathilde will find something wrong with them and the Youngest Boy I haven’t a clue about what he’s liking and not liking this week. But tonight it’s with pasta, so I’m hoping for the best.
- 2-3 ripe avocados
- 50g pine nuts
- 1 x large bunch of basil
- 2-3 garlic cloves
- Salt and pepper, to taste
Combine all the ingredients together in a food processor until completely smooth. Stir through cooked pasta and serve immediately.
No surprise that the kids ate pasta but Mathilde actually ate avocado. I’m going to say that again, she ate AVOCADO!! She hasn’t done that since she was a baby and I was weaning her. The avocado becomes slightly disguised underneath the basil, so it makes more of a creamy pesto than anything (and it’s totally vegan too).
