The youngest boy is obsessed with the Michael Rosen book We’re Going on a Bear Hunt. Completely obsessed. We can’t have a week without venturing out searching for our very own bears, complete with commentary from Jude as we trek through mud, “Squelch squerch”, make our way through forests, “Stumble trip” and wade through streams, “Splash splosh”.
This half term we’re taking it a step further and seeking out real bears on Jude’s first visit to the zoo. I’ve packed tasty treats in the way of ‘Bear Hunt Bites’. In actuality, these are dried fruit and oat based nibbles, sweetened naturally with apple, carrot and a scant teaspoon of maple syrup. The oats will provide the slow release energy we’ll need for a full day at the zoo and the cacao powder gives them an indulgent chocolaty flavour without any hidden nasties.
- 100g pumpkin seeds
- 100g pitted dates
- 2-3 apples (depending on size), grated
- 1 x medium carrot, grated
- 125g oats
- 1 x tbsp cacao powder, plus extra for rolling
- 2 x tsp maple syrup
Blitz the pumpkin seeds up in a food processor, then add the dates with a splash of water.
Add the grated carrot and apple, maple syrup, cacao powder and the oats. Blitz again until all combined.
Divide into 20 and roll into balls in the extra cacao powder until coated.
Leave to set in the fridge or freezer until needed.
