Day 292: Sweet Potato Crisps

The Man and I are having a rare mid-week night out. We’ve left the kids in the very capable hands of Auntie Julie and we’ve promised them treats of sweet potato crisps and pizzas (homemade of course!)

The beauty of these homemade crisps we’ve been making recently is that they taste enough of a treat whilst still secretly being healthy vegetables in disguise.

Ingredients:

  • Sweet potatoes
  • Garlic granules
  • Cayenne pepper
  • Olive oil 

Slice the potatoes as super finely as possible, leaving the skin on. Place in a plastic food bag with the oil, garlic granules and cayenne pepper. Rub them in the oil to ensure all the slices are evenly coated. Spread them out on a baking tray and cook at 200C for 15-20 minutes.

Leave to cool on on a wire wrack whilst they crisp up.

The kids were quite happy with these but if I’m honest, I prefer them deep fried for a bit more crunch.
