Goodbye weekend, you were far too brief!
Back to the slog of the daily routine. The only comfort I’m finding today on this dreary Monday is in soup.
I made a huge vat of courgette and split pea soup yesterday in preparation so there would be enough for lunches for the oldest members of the family and evening meals for the youngest. Unusually, it was a unanimous hit.
- 350g yellow split peas
- 4 courgettes, diced
- 2 onions, finely chopped
- 2 litres veg stock
- 1 tsp turmeric
Bring all the ingredients to the boil in a large pan. Simmer for 40 minutes, blend and serve with crusty bread.
