Day 280: Spinach & Potato Pakoras

Surely we deserve to treat ourselves to a takeaway tonight?

I can’t remember the last time we had one (or when I last had a night off from cooking!) I still can’t give in completely, so I’m making my own appetisers to accompany it, which feels slightly less indulgent (and unhealthy).

Ingredients:

  • 250g chickpea flour (gram flour)
  • half tsp baking powder
  • 1 tsp garam masala
  • 1 tsp cumin
  • half tsp ground fenugreek 
  • half tsp turmeric 
  • half tsp garlic granules
  • half tsp salt
  • 1 x green chilli, finely chopped
  • 250ml warm water
  • 3-4 medium potatoes, peeled and cubed
  • 150g spinach, roughly chopped

Mix together the dry ingredients in a large mixing bowl. Add the water and whisk until there are no lumps and the batter is a thick creamy consistency containing air bubbles.

Stir in the chilli, potato and spinach until coated in the batter.

Drop tablespoons of the mixture in hot vegetable oil and deep-fry for a few minutes until golden and crispy all over. Drain on kitchen paper and serve as a starter or accompaniment.

Perfect weekend food that even Tilda enjoyed!
