These little cauliflower bites are a perfect way to start the weekend. The batter is infused with spices and chilli to give the cauliflower a zing and they’re a delectable starter or side for a Friday night curry.
Ingredients:
- 1 small cauliflower
- 150g gram flour
- 1 red chilli, finely chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp fenugreek
- Pinch of cayenne pepper
- Pinch of garlic granules
- Salt
Chop the cauliflower into bite size pieces. Whisk all the ingredients together with enough water to make a batter (roughly the consistency of double cream). Coat the cauliflower in the batter, then deep-fry in vegetable oil until golden and crispy. Drain on kitchen paper and serve with mango chutney.
This was an alternative way to 5-a-day! (A tasty one though.) The kids were intrigued to try the pakoras though and I guess there’s some nutritional value hidden among the deep-frying…
