Day 257: Parsnip Crisps

I’m not generally happy about the kids eating packets of crisps, high salt, high fat junk food that has little or no nutritional benefit whatsoever, so I’ve come up with a solution. I’ve made my own from scrummy parsnips and even though I’ve deep-fried them tonight, at least they’re actually packed full of vitamins and resemble real food.

I peeled them, chopped off the ends and then sliced them super thin using a potato peeler and deep-fried them in vegetable oil until crispy. I drained the crisps on kitchen roll to soak up any excess oil and sprinkled a scant amount of salt on them to bring out the flavour. The kids thought they were the best crisps they’d ever eaten! Even The Man of the House, who usually turns his nose up at anything deep-fried and starts quizzing me about nutritional benefits enjoyed them.

This is the way forward; from now on we’ll be turning our backs on commercial mass produced offerings in favour of our own cheaper, healthier, tastier versions. I’ll be varying the veg after this trial run and may also try baking them.
