New Year’s Day: The Beginning

New Year’s Day. My first post, my first meal. It has to be something easy, something comforting, something family oriented and something everyone will eat.

Noodles with stir- fry veg (+ baked salmon for the boys)
  

Ingredients 

  • Noodles (cooked in boiling water for 4 mins) – I used wholewheat
  • 1 x whole broccoli
  • 1 x pack mange tout & baby corn
  • 1 x pack mushrooms
  • 1 x pack woodland mushrooms
  • 1 x bunch spring onions
  • 2 x cloves garlic
  • Coriander 

Chop all the veg into strips or bite size pieces and add to a large frying pan or wok with sesame oil: broccoli first, followed by mushrooms, corn, spring onions, mange tout. Add the crushed garlic. 

Stir fry on a high heat until all the veg is cooked but still crunchy. Add the noodles along with 2 x tablespoons of soy sauce and 1 x tablespoon sesame oil. Finely chop the coriander and stir through. Serve immediately and eat whilst still hot.

The boys added flaked pieces of salmon that had been cooked in the oven in foil with lemon for 20 mins.

Verdict: a safe bet – empty plates all round (apart from Lucas, who complained of too many mushrooms)
